asian pantry bento, redux

i know, spring has sprung, and i am psyched to try some new seasonal recipes… but i’ve been traveling like a crazy person for work, and haven’t had time to put together a blog-worthy spring lunch. until i can get around to doing that, i thought i’d share a lunch from a couple of weeks back. it was made with almost exactly the same ingredients as the pantry-based lunch i posted about here: same cannelini-rice mix (this time, with a quarter-cup of steamed spinach mixed in), same burdock namul (this time, with a purple potato flower garnish), same japanese pickles (the batch of veggies i pickled was a mix of lotus, daikon, and myoga ginger, and i’m still working my way through the jar). although this is super simple, the solid combo of carb-plus-veg-plus-protein (beans) is in keeping with the tone it up nutrition plan principles for meal 3 of the day (where meal 1 is breakfast and meal 2 is a mid-morning snack).

this came together quickly with a bamboo skewer of regular old canned black olives (leftover from another meal). the onigiri are filled with about a teaspoon each of white miso, and wrapped with a red shiso leaf from the pickle jar — these are what give my pickles the pretty pink color, although they go dark purple-ish in the jar after giving off their natural dye.

asian pantry bento

today was the end of a leisurely, three-day weekend, thanks to the president’s day public holiday.  because of the extra day, i finally got to shoot a bento in sunlight, something i rarely get to do as i typically make my lunches at night.  what a treat!  this bento is comprised primarily from asian ingredients i stock in my pantry.  calorie info and recipes (if they can be called that) below.

shy giraffe bento

my  latest j-list order arrived yesterday, woo hoo!  one of the items i’ve been eagerly awaiting is this cute set of animal picks, and tonight i decided to use the giraffe (which the boyfriend insists looks like a cross between a giraffe and a duck).  i also got one of the slender bento boxes i’ve been wanting to experiment with.  i’m pretty happy with how this turned out!

i have last night’s leftover dinner rice, layered over a bit of black beans, with a gentle giraffe on top.  a few fish sausage flowers and parsley leaves decorate the giraffe’s “habitat.”  the giraffe was made from a free-hand drawing (referencing some online photos), which i made into a simple template and then cut out of cheese.  his spots are made from the orange sheet of that cool colored soy paper i received from a bento pal — those colored sheets sure do come in handy!

in the top section, i have a few clementine wedges, some broccoli, a few fried tofu slices, a pea pod, an asparagus tip, and some japanese pickled cucumber (i love the purple color).  my new giraffe pick, spearing a grape tomato, tops this presentation off!  oh, and jello for dessert… yum.
